Healthy-Delicious Spicy Cabbage
Cabbage is the most popular vegetable in east Africa and they are inexpensive to buy, it is commonly used in preparing salad, curry, soup and various vegetables etc. Cabbage packed with lots of nutrients which contain vitamins (vitamin A, C & K ), Good source of fibre and iron, low in calorie. Healthy skin, improve digestion and reduce your weight lose as well.May be cabbage is not your favourite choice or your last options to choose in your diet.. Believe me it is so delicious, wonderful and gorgeous with this kind of recipe with healthy spices added. (turmeric, coriander and curry powder ) very tasty to eat even without meat. I’ve added little potato and carrot to make more colourful.
In my early days cabbage is not even my favourite dish. And how i come across to love cabbage! It is because the way how it’s cooked and delicious flavour. The experience i learn how to prepare it, is becoming from my mum. She used to cooked at home but even i never pay attention to eat am not interested also, she try to force me to eat, then I decide one day let me try, wow what a great taste! i thought the other way round, in fact I start to love cabbage and learn how to cook.

Cooking time: 1hrs 15 minutes
Half medium cabbage, thinly slice
2 medium onions grated
2 large tomatoes grated
1 tsp garlic paste
Coriander leaves roughly chopped (approx. 2 tbsp)
1 carrot slice chopped
Salt to taste
½ tsp coriander powder
½ tsp curry powder
½ tsp turmeric powder
3-4 tbsp vegetable or canola oil
2-3 potatoes cut into small cubes
2 tsp tomato paste
In a large saucepan heat oil over medium heat, add onions cook until tender, add chopped coriander leaves, stir constantly for 1 minutes then add garlic paste, stir for 30 seconds add tomatoes and salt let cook for 2 minutes.
Add spices, coriander powder, turmeric and curry powder stir, then add one cup of water stirring occasionally for 2-3 minutes. Now add chopped carrot and cabbage to cook for another 15 minutes, add potato cubes and little water to cook for another few minutes or until potatoes or cabbage almost cooked, then add tomato paste, cover and stirring occasionally until cabbage is ready, taste salt. Remove from heat.
